Vegan, Gluten, & Oil Free Pumpkin Spice Cake

It's about time I catch up on my blogging.  I've been so busy the last couple months and there are a few dishes I've made that I would like to be able to look up again and make.  September and October are busy, stressful months at work.  I am sure if you checked out a blog from this time last year, I probably mentioned the same thing.  My day job is pretty pleasant for the most part, but we do some pretty heavy number crunching in the fall preparing the plan for the next year.  I call it an accounting marathon.  I also had the great pleasure of heading up the kitchen at the VegFest in Portland, OR.  That took a bit of commitment too.  Things are settling back to the normal chaos, I'm coming up for air now, and have time to catch up on some great recipes.

I've been keeping my cooking classes not only plant based, but gluten free.  I am not gluten intolerant, that I know of, but I'm meeting more and more people who are.  I've been out with some friends who have celiacs disease and many times they can only have lettuce or raw carrots in a restaurant.  In all the presentations I attend and articles I read, it's a good idea for all of us to moderate our gluten intake.  It's not been difficult to make some great gluten free meals.

This cake took some work because I also wanted to make it oil free. It took a few tries, but I managed to come up with a recipe that works every time.  My husband was a little disappointed I figured it out because it meant I wasn't going to make a cake every three days trying to get it right.  Here it is for you to try.  If you don't mind using wheat flour, just leave out the xanthum gum.

Here's one of my first attempts.  It was good, but still a little too moist in the middle for my tastes.

I went to so much trouble to make this cake healthy, I chose not to frost it at my cooking class.  I lightly sprinkled it with a mixture of organic powdered sugar and a dash each of cinnamon and nutmeg.  I thought it was a bit dry for some so I added just a little dollop of some pre-made rice whipping cream and garnished with a couple nice dried cranberries.

Vegan & Gluten Free Pumpkin Cake

               By Debbie Kay

Two eight inch layers or one 9”x 11” baking pan, or 24 mini cupcakes
Ingredients:
  • 2 cups pumpkin puree
  • 3/4 cup unsweetened apple sauce (1 large or two small apples with 2 TB filtered water puréed in high speed blender)
  • 1 teaspoons cinnamon
  • ½ teaspoon nutmeg
  • ¼ teaspoon each cloves & ginger
  • 1&1/2 cups organic Sucanat, coconut sugar, or brown sugar, packed
  • 1 teaspoon vanilla
  • 3 egg replacements, (I like ENERG egg replacer for this cake, 1 TB egg replacer with 2 TB water = one egg replacer)
  • 2 cups Bob’s Red Mill Gluten Free All Purpose flour
Unbleached all purpose flour can be used, omit the Xanthum Gum
  • 1 teaspoon Xantham Gum
  • 2 tsp. baking soda
  • 1/4 teaspoon salt
Directions:
To make the cake:
  1. Preheat the oven to 375º
  2. Cream vegan margarine or applesauce with the sugar.
  3. Mix the powdered egg replacement with water as directed on the package.
  4. Add the liquid egg replacements to the creamed vegan margarine and brown sugar.
  5. Mix the pumpkin puree and vanilla to the creamed margarine mixture.
  6. Sift the flour in a large mixing bowl, add the baking soda, salt, cinnamon, nutmeg, cloves, and ginger and mix well.
  7. Add the wet ingredients to the dry and blend well.
  8. Pour the batter into parchment lined baking pans.
  9. Bake for 55 min. to 1 hour. Test with toothpick, toothpick should come out clean
  10. Cool on a rack before removing from the pan for five minutes.
Sprinkle warm cake with mixture of organic powdered sugar, cinnamon, and nutmeg. Or, frost with your favorite vegan frosting after completely cooling.

Here's a quick buttercream frosting if you prefer a frosted cake.  Add a tablespoon of lemon juice for a cream cheese taste.

Buttercream Frosting

1 cup softened Earth Balance or other vegan butter
1 cup palm oil shortening
3- 4 cups pound sifted organic powdered sugar
½ tsp Vanilla or seeds from ½ Vanilla bean

In the bowl of a standing mixer or food processor cream together the Earth Balance and the palm oil on medium to high speed until completely combined.  Turn the speed down to low and slowly add in the sifted powdered sugar one cup at a time, allowing it to blend thoroughly before adding more.  Add in the vanilla and continue to blend until the mixture looks creamy.

Four Ingredient Vegan Pumpkin Pie

Way behind on posting, I've been neglecting my blog.  I have been busy in the kitchen, as usual, but a lot of the meals I've been making have been repeats.  Although there are a few I want to share, many of the meals I've been making have become staples like the vegan mac & cheese or flax crackers.  It's been pretty handy having the recipes I like or create posted somewhere so I can look them up again.  So many meals in the past I've not been able to repeat very well because I didn't write down what I did.

I've had a great four day holiday weekend complete with some cookie baking with my son, cooking and crafts with my granddaughter, and some great meals at the dining room table.  Thanksgiving has been a week long celebration here beginning with a Vegan Compassionate Thanksgiving last weekend with the NW Veg folks in Portland, OR.  Three hundred and forty people gathered for a holiday vegan meal.  We met some new friends and shared some hugs with familiar friends.  There were so many wonderful dishes.  We walked around the tables looking at them and taking some photos as guests arrived.  I could tell there was no way I was going to taste everything I'd like to.  I am also really glad we got some photos of the ingredient cards as well as the food.  I can recreate some of the ones I like and some of the ones I didn't get to try.
I brought the pumpkin pies I've been making this fall and winter. I found a pretty easy pumpkin pie recipe. It contains only four ingredients that bakes up like the traditional pumpkin pie people are used to.  It's firm, but creamy when you slide it in your mouth with the cashew coconut creme.  They disappeared pretty quickly.  I took home two clean pie plates. I made it with a gluten free oat flour crust for Thanksgiving and my granddaughter loved it.

Four Ingredient Pumpkin Pie

vegan, makes one pie

1 1/4 cups raw soaked cashews
1 cup maple syrup
1 can organic pumpkin puree (16 ounces) (or use fresh puree)
2 tsp pumpkin pie spice

optional: 1/2 tsp salt to taste (depends how much salt you soaked your cashews in)

ingredients notes: using high quality spice is helpful. Also, I prefer grade B maple syrup for its rich amber tones and caramelized flavor - but grade A works too.

One standard vegan pie crust - or make your own using my instructions in this post. Also reference my crust-making how-to video here.

To Make:

1. Soak about one cup of raw cashews in about 2 1/2 cups of water in a large bowl. Add about 1/2 - 1 tsp of salt to the bowl - mix to dissolve. The salt allows the water to absorb more efficiently into the cashews and also adds some salt for your recipe. Note: you may want to soak more cashews than needed and make two pies - or use in other recipes.

2. Soak this cashew bowl for two hours. You want well-soaked cashews so that your pie mix blends up perfectly creamy.

3. The day of your actual pie making allow at least 3 hours from the time you start to the time you wish to serve the pie. I like a cool time of at least 2 hours.

4. Preheat your oven to 400 degrees.

5. Drain the water from your cashews. They should be very soft to bite and a slight purplish dark hue. This is normal. Add 1 1/4 cups of cashews to your food processor - or even better, or high speed blender like a Vitamix or Blendtec.

6. Add pumpkin to blender. Next, add in the maple syrup and pumpkin pie spice. Blend on low -> high for about 3-5 minutes until the mixture is completely creamy. If your mixture is a bit thick for some reason - you can add in a few teaspoons of either water, maple syrup or even non-dairy milk. After blending, do a taste test and add a 1/2 teaspoon of salt if needed. I added in about 1/3 tsp extra salt. But taste before adding.

7. Pour your mix into a par-baked vegan pie shell (I toast my raw pie shell in the 400 degree oven for about 8 minutes). You can buy a frozen crust or make your own per instructions linked in recipe above.

8. Bake pie at 400 degrees for 15 minutes. Then reduce to 350 degrees and bake for an additional 30-40 minutes - or until the edges look fluffy and a darker caramel orange tone. Use a toothpick in center if unsure. The tooth-picked filling should come out slightly wet - but very thick and dark. It is important to remember that your pie will firm up significantly upon cooling and chilling in the fridge.

9. Remove pie from oven. Cool on counter for at least 30 minutes. Then place in fridge until ready to serve. At least 2 hours cooling and/or chilling time is my preference. A warm pie will be tasty, but still a bit "wet" to slice.

10. I serve chilled with a swirl of my vegan coconut whip on top!!

Pumpkin Spice Carrot Cake With Cream Cheese Frosting ~ Vegan

This was definitely a big hit at the potluck this weekend.  There wasn't much evidence that a cake had been on that platter when we were cleaning up.  It's a flavorful cake with a dash of cayenne.  I was excited to see how cayenne in a sweet cake would work out, love it! The frosting is fun and really good.  The cashew creme I usually make doesn't hold up it's shape like this one did.  This frosting allows me some time to work with it before it softens too much.  But, this frosting does have quite a bit of sugar.  I'll probably make this cake a couple of times this fall and winter.  I think I'll stick to a dusting of powdered sugar and make this frosting for special occasions  At least occasions where we'll have help eating it.

This is another great recipe from the VegNews 2011 Food Issue, the featured recipe on the cover.  I made two cakes, one a week ago to test the recipe for the potluck.  I just dusted the first one with a little organic powdered sugar and it was great.  Frosting is nice, but it isn't necessary.  This cake is moist and sweet enough by itself.

I didn't make many changes.  I used sucanot for the sugars and any non dairy milk and creamer can be substituted.  I think I used almond milk and coconut milk creamer.  I used fresh pumpkin, pecans instead of walnuts, and coconut cream whipped with a tablespoon of fresh squeezed lemon juice instead of the vegan sour cream called for in the frosting recipe.  I did use the vegan cream cheese, margarine, and shortening.  I thought that was already overdoing it on the processed vegan ingredients, so I didn't want to add any more if I could help it.  The amount of sugar in the frosting is pretty scary too. This frosting recipe will be great for events I want an impressive looking dessert, that's for sure.

Makes one 9-inch cake

For the Cake:

2 cups flour
2 tablespoons baking powder
1 teaspoon baking soda
3/4 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon cayenne
1/2 cup brown sugar
 1/2 cup sugar
1 cup canned pumpkin
3 tablespoons maple syrup
1 cup non dairy milk
1 tablespoon vegetable oil
2 teaspoons vanilla
1 tablespoon apple cider vinegar
2 tablespoons egg replacer
3 tablespoons water
2 1/4 cups shredded carrots

For the frosting:

8 ounces vegan cream cheese
1/2 cup vegan margarine, softened
1/2 cup vegan shortening, softened
1/2 cup vegan sour cream
5 1/2 cups powdered sugar, sifted
2 tablespoons soymilk or soy creamer
1 teaspoon vanilla
3 tablespoons cornstarch
2 1/2 tablespoons maple syrup
1/8 teaspoon salt

Preheat oven to 350º, and grease two 9-inch round cake pans.  For the cake, in a large mixing bowl, combine flour, baking powder, baking soda, salt, cinnamon, and cayenne.  Add brown sugar, sugar, pumpkin, maple syrup, soy milk, vegetable oil, vanilla, and vinegar, and mix well.

In a small bowl, combine egg replacer and water, then add to the cake batter.  Fold in carrots and walnuts, and pour batter into prepared cake pans.  Bake for 35 minutes, or until edges start to lightly brown.  Allow to cool completely before frosting.

For the frosting:  In a large bowl, combine all ingredients with a hand or counter-top mixer until smooth and creamy.  Place in refrigerator to chill for 10 minutes before frosting cake.  When cake and frosting are chilled, frost cake, garnish with freshly shredded carrots, and serve.

Thanks for sharing your recipe Kathy Patalsky!  I think I'll be making this a few times before the year is out and checking out your other recipes.

Gluten-Free Vegan Pumpkin Chocolate Chip Cookies

Our community potluck is coming up next Friday and I'd like to bring some seasonal goodies.  It's October and time to cook some pumpkin.  I've got two new pumpkin recipes to try:  pumpkin chocolate chip cookies and a pumpkin carrot cake. I didn't get very many pumpkins from my garden this year.  I am lucky to know some local organic farmers, Mike and Ruth from Willow Grove Gardens.  They have a very large portion of their farm dedicated to pumpkins.  They host a large part of the community every day through October.  They bring the animals out for a little petting zoo and have a pretty nice hay cart ride out to the fields where there are hundreds and hundreds of pumpkins to choose from.

I cooked up two of them today thinking I wouldn't have enough purée.  I ended up with about 5 quarts. Half made it into the freezer, the other half will be pumpkin carrot cake and pumpkin chocolate chip cookies.

These cookies are from the latest Food Issue of the VegNews Magazine.  They're vegan and gluten-free.  I've been practicing with gluten free more and more since my granddaughter has been advised by her doctor to try to avoid gluten.  We have quite a few guests at the potluck who are sensitive to gluten and avoid it.  These are a light cake like cookie.   I tried a batch and I'll make another and freeze them right away.  They'll be perfect if I take them out of the freezer Friday morning and that will give me some more time to work on that pumpkin carrot cake with a vegan creme cheese frosting.

I didn't have enough almond butter, but I do have some pumpkin seed butter.  It worked out great. The recipe called for white vegan chocolate chips.  I am lucky to find regular vegan chocolate chips at our stores.  I just used dark ones and only 3/4 of a cup.  I also used cinnamon, fresh ground nutmeg, and a dash of cloves for the pumpkin pie spice.

Gluten-Free Double Chip Pumpkin Cookies
                  Beverly Lynn Bennett

1/2 cup water
3 tablespoons ground flaxseeds
1 1/3 cups brown sugar, packed
2/3 cup canned pumpkin, (I used fresh pumpkin)
1/2 cup nut butter of choice
3 tablespoons sunflower oil
1 1/2 teaspoons vanilla
2 cups gluten-free flour
1 teaspoon pumpkin pie spice
1 teaspoon baking powder
3/4 teaspoon xanthan gum
1/2 teaspoon salt
3/4 cup each vegan gluten-free white and dark chocolate chips

1.  Preheat oven to 375º degrees.  Line two cookie sheets with parchment paper or Silpat liners.  In a large bowl, stir together water and flax seeds and set aside for 5 minutes.  Add brown sugar, pumpkin, nut butter, sunflower oil, and vanilla, and stir well to combine.

2.  In a medium bowl, whisk together flour, pumpkin pie spice, baking powder, xanthan gum, and salt.  Add dry ingredients to wet ingredients and stir well to combine.  Fold in chocolate chips.

3.  Portion cookie dough using a 2-inch scoop or heaping 2 tablespoonfuls onto the prepared cookie sheets, spacing 2 inches apart.  Bake for 12 to 14 minutes or until very lightly brown on the bottom.  Let cool slightly before transferring to a rack to cool completely.

Using a 2-inch scoop this recipe yields three dozen cookies.  I noticed they weren't spreading out any.  I didn't want pumpkin balls. I flattened them a little with a piece of parchment paper and my hand about 6 minutes into cooking.  Then I cooked them another 8 minutes.

Pumpkin Risotto

I cooked a medium pumpkin this weekend.  Made some vegan pumpkin pie ice cream, a dairy free pumpkin pie, and pumpkin risotto.  There is still a little bit left for something else.

Pumpkin Risotto

    * 1 onion. diced
    * 1 tbsp olive oil
    * 2 cups arborio (risotto) rice
    * 1 cup white wine
    * 4 cups vegetable broth
    * 1 cup canned pumpkin
    * 1 tsp fresh ginger, grated or minced
    * 1 tsp nutmeg
    * 1 tbsp chopped fresh basil
    * 1 tbsp margarine
    * salt and pepper to taste

I added 3/4 cup cashews and nutritional yeast to the pumpkin pure which gave it a rich cheesy texture and taste.  Served with a fresh salad of Chard, collard greens, peppers, carrots, and diced avocado with a little lemon juice.

Preparation:

Saute the onion in olive oil over medium heat for three to five minutes, or until soft. Add the rice. Allow to cook, stirring, for a minute or two. Slowly add the wine.

Start to add the vegetable broth, 1/2 cup at a time. Allow the moisture to cook off before adding the next 1/2 cup. Stir frequently.

Add remaining ingredients, stirring well, and cook for just a few minutes, until heated through.

Pumpkin Curry Soup with a White Pumpkin

I picked up a little white pumpkin this week.  Perfect for a batch of Pumpkin Curry Soup.  I was pleased when my granddaughter said "Oh boy grandpa, we're going to have more pumpkin soup."

Pumpkin Spice Delights

Follow this link above to the recipe

Birthday at work and there are lots of allergies among my coworkers. I made these with soy and brown rice flour for a gluten free cookie.  Dairy Free and this time I used Xylitol  instead of the turbinado sugar.  A lower glycemic cookie, my diabetic friend can have some too. I also used pecans instead of walnuts and dried currants instead of raisins. I toasted the coconut and the pecans. They're a soft cookie, kind of like a little pumpkin cake.

I just found out someone else is allergic to coconut.  I almost omitted the coconut, but then remembered I had used 1/2 cup coconut oil with 1/2 cup vegan margarine because I didn't have enough vegan margarine already made up.  I'll make something without coconut next time for Cathy.

Vegan Pumpkin Muffins with dried Currants

Pumpkin Muffins with dried currants

15 oz pumpkin purée
1/2 cup maple syrup
1/2 cup oil (I used grape seed oil this time)
2 tsp vanilla
1/2 cup mashed banana
1 1/2 cups spelt flour
1 1/2 cups whole wheat pastry flour
1 TB plus 2 tsp baking powder
1 tsp cinnamon
1/2 tsp sea salt
1/2 tsp ground cloves
1/2 cup dried currants

Preheat oven to 350º

In a large bowl, mix pumpkin purée, maple syrup, oil, vanilla, and banana. Mix thoroughly.  In a separate bowl, sift flours, baking powder, cinnamon, sea salt, and cloves.  Add dry ingredients to the pumpkin mixture and stir until just combined.  Fold in dried currants.

Spoon into prepared muffin pan and bake for about 20-25 minutes.  I made mini-muffins so the cooking time was about 20 minutes
